Yum, these cookies are just as good as promised.  The burnished yellow color comes from adding a teeny bit of saffron, an exquisite ingredient generally found in savory dishes and not often used in cookies.  If you have ever purchased saffron, you know how fragile and expensive the little threads are. Luckily, it doesn’t take many threads to add color or subtle scent and flavor.

Purchasing saffron for the first time?  Don’t let the price scare you away.  A little goes a long way.  Make the cookies and save the leftover spice for paella, saffron bread or a veggie couscous dish I will post sometime this Fall.
